Peanut Butter Christmas Cookies

TIS THE SEASON TO BE JOLLY
I am not a sweets person. I don't bake cakes often... or brownies... or cookies. During the holidays, I may dabble into one or two "sweet" things that I normally wouldn't want or crave-- and maybe that is just my body saying, "IT'S COLD -- EAT EVERYTHING YOU CAN SEE!"
So stupid.
IF I do find myself baking sweets, it's usually around the holiday and it usually has some savory aspect too. So, of course, that leaves us with the famous-not-so-famous Vegan Peanut Butter Cookie. And let me tell you, Peanut Butter Cookies are DIFFICULT to make! With that said, tie your apron tightly, smack yourself in the face a couple of times, and good luck.
Step-by-Step Breakdown
2 tablespoons of "Neat"egg substitute , mixed with 4 tablespoons of water in a separate bowl. Let sit. **another substitute can be ground flax or chia
3/4 cup Earth Balance vegan butter (no soy), cold. **another substitute can be coconut oil.**
Place the stick with the egg substitute in your food processor.
Pour in 1 tablespoon vanilla almond milk.
Blend in food processor until smooth.
In a separate bowl, mix together 2 cups flour, 2/3 cup organic light brown sugar, 1/2 cup granulated white sugar, & 1 teaspoon of cinnamon and salt.
Pour into food processor with the wet ingredients and blend together until smooth.
Add in 2/3 cups of crunchy organic peanut butter.
Blend in food processor until mostly smooth, its okay to have a few peanut crunchies.
Wrap your dough and let sit in refrigerator for 30 minutes.
After 30 minutes have passed, take your shit.. I mean dough... out of the fridge and preheat your oven to 350 degrees, F.

While the oven is preheating, do NOT stick your head in it. I know the holidays can be stressful, just don't do it.
Instead, mold your cookies into 2 inch balls and roll in extra sugar.
Spread them out on greased pans. This will make 25.

Once they are spread out on the pan, take a fork and press them into a hashtag (or pound/number symbol) so that they can cook evenly.

Once the oven is preheated, you are good to bake the cookies for 10 minutes.
