Lazy Weekends with Nymeria: Tofu Breakfast Scramble

When it's a lazy weekend morning and you feel like this...

...and also kind of like this...

...you might want to roll off that pillow and make something like this...!

 

To make a quick scramble, the tofu needs to be cooked first with lemon, paprika, and apple cider vinegar. Cube it up and press it down with your spatula as it cooks in the juices.

(per 7 oz of extra firm tofu)

1 tablespoon olive oil to coat pan and cook with the ingredients

2 tablespoons lemon juice

1 teaspoon paprika

1-2 teaspoons apple cider vinegar

Cook on a medium-heat burner.

Add in: Mushrooms, vegan cheese by Daiya, banana peppers, kale, and diced yellow onion **salt and pepper to taste**

Get funky with it!

Add whatever makes you happy with your first cup of joe in the AM. Before you know it, you will be more like this...

Factoid: Breakfast is THE most important meal of the day.

It is so vital to get food in your belly within the first 2 hours of waking up. I used to ignore this rule, but I see the light now - literally, I feel way better throughout the day and my metabolism works faster. Why not take advantage of this prime time to eat? You know how the old saying goes:

Eat like a king at breakfast, a lord at lunch, and a peasant at dinner.
